I'm guessing you're getting the phone shipped to you? I'm doing in-store pickup and I am guessing they don't technically have my serial number down yet. They may just have an allotment for pickups and just pull from that pool?

Did you guys not read the email properly? It clearly states the following.
Your Coverage End Date will automatically adjust to two years from the date you first activate your iPhone.
