If I buy a HomePod and get AppleCare and then buy another at a later time should I get AppleCare for that one too or will it cover both?

Applecare is specific to one device when you purchase it at the time or a later date. But it does not cover multiple HomePods as you're asking.

Single product, by serial number, as noted above. It wouldn't make sense for apple to have it cover a number of homepods.
