Meanwhile I know how to delete folders and files like .AppleDouble, .AppleDB
    and .DS_Store from my NAS.

As I use the NAS also with my Windows and Linux devices I prefer these files and folders not even to be created (I understand it might be necessary for a smooth working OSX, but on most of these directories I will have no frequent access with my mac and therefore I don't want these files.

How can I learn Yosemite not to create such files on either network shares (NAS) or USB devices?

P.s. want to know how to avoid the creation of .AppleDouble etc. For .DS_Store I do know the solution....

    defaults write com.apple.desktopservices DSDontWriteNetworkStores true

    Should have the desired effect.
