If you are spending this much and not upgrading the RAM, you are doing it wrong. Looks like they are all locked 8gb configs. Typically those are the ones heavily discounted because no on wants them.
No, anything above 8GB of RAM is a BTO so the 8GB ones are heavily produced and the ones that sell 9/10 units.
 
The M1s are still more than good enough. Nothing I've seen about the M3 makes we want to upgrade from my M1 14inch Pro. M3 is too soon after M2 and feels like another incremental upgrade.
I probably wouldn't either.
However I'm upgrading my 13" M1 MBP, the M3 is compelling for my use

My 2021 14” MBP M1 Pro base model still manhandles everything that I can throw at it. Zero reason for me to ‘upgrade’ to an M3 or even an M2 for that matter. I’m sure they’re really nice computers if you are in need of a new one or buying your first laptop, but Apple is going to have to do much more than include some new chip to catch my attention. Something new and actually innovative would be a great start.

I would never buy from Adorama. They failed to ship my laptop on time (and I was at risk of losing out on a rebate) and I cancelled the order. They eventually ended up shipping it anyway and then refused to refund the shipping charge.

The default config should be 16/512, no excuses Apple!
I'm fine with the M3 starting at 8 GB RAM; it's the "Pro" laptop starting with the chip below the "Pro" that rankles me. Even leaving aside the philosophical question of what "Pro" really means, the inconsistency is just begging to cause customer confusion.

Just be aware that sites like Adorama and B&H Photo do not allow returns of opened laptops.
They do this for good reason. I used to work in the photo business and, unfortunately, you get a lot of people who will 'buy' laptops and cameras just to do a job for the weekend, then return it all on Monday to get their money back. Even with cameras, that's why a lot of companies now have an automatic restocking fee if the tape on the box is broken or an opened camera is returned.

I’m not saying there isn’t a good reason. Just that buyer should be aware, particularly since we are in that 2 month window where Apple allows an extended trial period no questions asked so long as the machine is still salable when returned.

Apple has always used software to handicap devices. Take the iPhone as an example. So why not do something similar on the MacBook?

You know what they say; if you want a company to change, sue sue sue!!
