In any case, the Mac will never compete with Windows for gaming, as anything with a decent GPU on the Mac is very expensive, not upgradable, and internal storage costs a fortune. It will therefore never be a mainstream option, so doesn’t attract developers.

There is nothing intrinsic about TSMC that makes them the only ones capable of producing a top-end fab. Their success is an economics issue. Morris Chang was originally an engineer at TI, and economic circumstances led them to produce the world's best fabs. I've been working with TSMC processes since the 90's, and continue to do so today, and know enough about their processes to fix technical problems they have with their PDKs.
Nvidia never had the tens of billions to build their own fabs until a couple of years ago - their Q2 FY23 is their first large-scale money-making quarter. Apple is the only company with the diversified business model and the money available to produce their own top fabs.
