I think they can lean more into the “only for Apple” with Apple branded ones. For example, Beats Studio charge via micro-USB. The Apple brand could charge via lightning, USB-C or wirelessly.
They’ve been in that business for years, do you mean why do they stay in it? Probably because it’s very profitable. Beats is still the number one seller for headphones.

The professional market will be hard to crack. There are already some very nice headphones from the likes of AKG or Sony. Thes are not just good but are industry standards that people use as a reference.
Pros are not interested in exaggerated bass and other kinds of sonic "coloration" that Beats has. So I can see why Apple does not want to market these under the Beats consumer brand. The pro headphones will have a different sound.
But what does Apple have to offer that has not already been available for decades?

However, I would love it. I am a Sennheiser devotee and can’t stand Beats or Bose. Wireless protocols have made huge progress. So has noise cancellation. So have mics. I can’t find a single device that successfully pulls this all together. I actually have badly needed this during quarantine.
A wireless headset that sounds good for music that I can also use for calls that blocks my ambient sound for me and my listeners. Hell, I’d get enough for all my coworkers I talk to regularly.
I am afraid Apple would balk at having a mic that properly extends in front of your mouth. So we might get stuck with headphones that are terrible for call listeners like AirPod Pros.
Other than that possibility, they are well positioned to pull it off. The sound on the HomePod and the MBP 16” are both impressive for their respective sizes. The sound isn’t good for Airpods but this provides the necessary experience with the latest bluetooth protocols and customization of those. Maybe they can learn from the Airpod Pros as well.
