The above is correct, but only for USER-defined items.
There is also a Start-up items folder in System>Library>Startup items. It has system-defined items in it, and possibly some apps that install OS-level data (not many, mainly haxies).
Be VERY careful about removing anything from this folder unless you know exactly what it is & what it does 😛
