I'm not going to put this one in the Wiki post because I don't think it fits into the categories you have listed, but I will mention it anyway since they mention the iOS release in the notes. I have an app called "FlightLogger". I got an update for it yesterday that took care of some bugs and also included a "few more cleanup tasks as we prepare for the forthcoming iOS release". (Quoted from the release notes). I'm not sure if it was just their way of saying it is going to support it already or if there will be another update from them within the next few days or so.

EDIT: NurseGrid Mobile also just added support for iOS 13, but didn't specify anything about Dark Mode, Siri Shortcuts, or anything like that. Just general support, it seems.

Infuse has long had dark and light modes, but it has added support for automatic dark mode switching for ios 13

Not sure what you mean by this. Turn on dark mode in Outlook it looks like every other app running dark mode.

iOS 13 has a system-wide Dark Mode. This thread has a list of apps that have been updated to support the iOS system-wide Dark Mode. The dark mode in Outlook is independent of the system-wide iOS feature and doesn’t automatically switch on and off depending on system settings in iOS 13.

Thanks! Yeah, that’s why I didn’t put those straight up there at first. I figured it probably wasn’t the point since it didn’t fit a category If I get another update for those two apps that actually mention something specific, I’ll pass that info along!
 
The Tailosive Hub supports dark mode now. It's currently only in TestFlight for testing. Still counts though, right? ;)

How do you edit the wiki? (and yes, I have the requisite number of posts to do so). Would like to add Drafts to the works with Siri Shortcuts category.

Also, substantively, anyone have any idea how to switch from an email login or Sign in with Google (e.g.) to Sign in with Apple on sites/apps where we've already signed up? There are a bunch where I'd like to do that, but without having to create a totally new account.

Interesting. When I created the thread, I made it a wiki post, and other forum members have edited it. Somehow I think the wiki post status got lost during the forum upgrade process.

EDIT: It looks like the pinned threads that were wiki posts also aren’t wiki posts anymore.
