Are all watches built-to-order?

There's a lot in Exeter. I see it a lot on students, but yesterday I even saw one on the middle aged woman behind me at Costa.

I picked up my AW at our local Apple store last night and there was an older couple in their late 70's or 80's who walked out of the store wearing their new watches. Looks like the watch is for all ages. Still not seeing a lot of watches around my neck of the woods.
