I made the jump from the first generation watch to the non LTE Apple Watch 3... It is a difference like night and day... I am happy with the Series 3, it is fast, it has a much better battery life... I get 2-3 days of battery life depending how intense is the usage (especially the workout apps while hearing music and using GPS are the energy eating apps).
When I bought the new watch I really thought about the LTE model, but sincerely... The only time I don't have my iPhone with me is when I am doing workouts at the gym or when I go for a run... And at that time I don't want to get phone calls... And also the capacity of 4GB for music playlists is more than enough... My workouts are about 1 and 1,5 hours... So, I am very happy with the decision and with the watch... I don't need the LTE model...

I think that most people don't need the LTE model but just want it for the occasional use. Intense use is not possible as the LTE will kill your battery in 3 hours... So, it is just a personal thing to decide if you want to spend the extra monthly bucks in an extra phone/data plan that is bounded to the country and to a special carrier (here in Germany you have to use T-Mobile and as soon as you leave the country it stops working because it does not support roaming)
 
I’ve been using the Apple Watch 3 (42mm, aluminum, GPS) for a few weeks now. I’m very happy with it. I don’t typically find myself without my iPhone and didn’t see the need for LTE on the watch, aside from maybe resale value down the road.

However, I left the house for a run without my phone. I wanted to run with a coached run on a running app. When I tapped start I was promted to download the workout. I had to return home, download the workout and head out again. Minor inconvenience that likely won’t happen again.
 
Try unpairing and re-pairing, and restore from backup
If it's still weird, try repairing but no restore

Maybe it’s the battery on the 0 series.

I’ve tried umpiring, re-pairing, completely erasing and restoring. My battery didn’t last Christmas Day.
