Buddy reset device after backing up and then ran Absinthe to JB. On 4s and 5.1.1. Didn't have camera roll at all and I'd trying to let him do another all reset and device just sits and spins. What can we do from here?

Try kicking it out of recovery with redsn0w or TU.
Or put it in DFU and restore to stock 5.1.1

And in case you mean you're doing this... Don't reset using the option in the settings menu ("erase all content and settings" I believe). I know the tutorial says to do this, but it's been causing headaches for days. Never do this, just restore in iTunes.
I did my first jail break ever on my Iphone 4 a few days ago using Absinthe as well. At first everything was there EXCEPT the camera roll. I was getting to try and sync with iTunes and see if that would do it when suddenly the pictures came up.
