How can I associate a particular file extension with a particular Application? For example, I'd like all *.csv files to be opened by Excel, or I'd like all perl modules *.pm to be opened by TextEditor. Is this possible? I know you can right-click on a given file and use "open with" but how does one get it to apply to ALL files of the same extension?

In Finder, get info (File menu or command-I) on a file with the extension. Then in the "Open with" section, choose the new application from the menu, and then click the "Change All" button.
