While still waiting for the UPS truck (lunch break) it's my understanding that I will migrate first from prior iPhone to the new one and I have a fairly good understanding what to do here.

However I am not quite clear on the sequence going from a Series 3 to Series 4 regarding setup and activation. The Series 3 currently has AT&T cellular service.

What is the best way to transfer my service to the new watch? Just activate the new watch with new service during the setup as it was with series 3 or is their a smarter way?

Maybe some have already their deliveries and went through the process.
 
When I unpaired my old watch, it asked if I wanted to keep the cellular service on the watch... since I was going to pair a new watch, I chose Remove. When I went to pair the new watch, the cellular setup opened a browser up to AT&T and AT&T found my watch phone # and set it up with no issues.

Generally when doing a double upgrade, any benefit to restoring from iCloud for both watch and phone vs just doing clean starts with both? Right now my current devices both work perfectly, and I don’t care too much about a few extra hours of setup and download, especially since restores loose all accounts and passwords anyway.

Wondering If I should just jump straight to clean setups for both devices, then wipe and shut off the old ones?
 
I had to replace my Series 3 twice. You should be keeping the plan, but deleting/unpairing the Apple Watch, it is no longer associated with the plan. When you pair/sync the new watch, it will ask if you want to use cellular, when you go through that step it will ask if you want to use the old watches phone number. You say yes, and it's done. Keep saying set up if it fails, because it might take a few attempts.
