    Hi everyone!
My wife and I have a grandfathered Unlimited Family Plan with AT&T.

I got an iPad3 (which has 4G capability). Can I get another line within my Family Plan from AT&T, and take the SIM card and have unlimited data on my iPad?

I don't think this will work because AT&T will see that you are trying to activate a tablet on an unlimited smartphone data plan.

If the SIM card is already activated, how would they know?

AT&T Family Plan Line to iPad 3 SIM?

You can try it but as I stayed above I doubt it will work. AT&T is going to see that your trying to activate an iPad on a smartphone plan. If you were to look at all the features on your account it probably says something along the lines of unlimited data plan smartphone. I doubt that this type of plan will work for the iPad. AT&T is able to see the IMEI of any device you insert your SIM card into.
