I'm about to upgrade my iPad 2 to the Air. As I'm keeping AT&T as my carrier for non-Wifi connections, do I need to cancel the previous account, or will this happen automatically when I set up the new iPad?

The account should still be active and unchanged. It wouldn't hurt to goto AT&T and make sure everything is squared away. You will also need them to provide you a Nano SIM since the SIM card technology has changed from iPad 2 -> iPad Air.

Thanks. It all worked smoothly when I set up my iPad Air. It asked if I wanted to create a new account based on my previous one, and it was done.
