I can’t seem to find anything online - is there any way to unpair the Siri remote from an AppleTV? I can only info on how to reset it.
 
I think there isn't. But the only reason I can think about why you want to do unpair it is to pair it with another device. I believe the best way to do it is simply unplug the ATV it is currently paired with and pair the Siri remote with the second device.

Then if you are trying to so something else, please elaborate.
 
Apple TV user guide only mentions that:
  1. Only one Siri remote at a time can be paired with a particular aTV
  2. If you pair new Siri remote, the previous one will be automatically unpaired
The whole manual mentions the unpair word just once, in this exact place.

Are we talking about disabling Siri or the whole remote.

Accidentally I found out my old ATV3 remote works on the ATV4-4K! go figure, I thought they were specially paired too.

That old remote works over IR and if not specifically paired with aTV3, it will command all devices receiving the signal. That remote can also be specifically unpaired. It is actually the same remote used with all previous MacBooks, Mac Minis and iPods, just in aluminium case.
Siri remote communicates over Bluetooth and needs to be specifically paired.
(It also has IR transmitter, but to control TV or AVR if you program it to do so).
