I keep my "Auto Brightness" on "Off" and the level on max brightness.

Several times a week, my screen darkens and I have to go to settings and move the slider to the right again. Any thoughts as to why?

Maximum brightness? . . . Are you using your device in an extremely bright environment?

Have you attempted to set the screen brightness setting just shy of maximum?

Might be a safety precaution.
They may dim down to prevent burning out/breaking internal parts.

Your device may also be prone to overheating and this was just a prevention to having it become dangerously hot.

I keep it on bright regardless of whether I am in a bright environment. Just want my screen bright all the time. I keep it charged when I am near an outlet, including my car so power is not an issue.
