This morning, I was organizing cables and had to unplug one of my externals, so I ejected it in Lion, then turned it off, then unplugged it from the power strip. For some reason, the iMac instantly rebooted itself.

I was thinking that maybe there is some sort of issue with the power strip that causes this? It has happened twice.
 
Well I am not exactly sure what you mean. but check this out, go to System Preferences > Energy Saver, and check to see if "Start up automatically after a power failure" is checked. That may be what is causing the problem.

That is what I first thought of as well.

What I did was eject the disk in OS X. Then turned it off at its power switch. And THEN unplugged it from its power source (the power strip plugged into the wall). Then it rebooted the iMac. Twice.
