Ive only ever seen this feature advertised on MB devices. You open the lid and if you have the watch on then it just logs in. But what about the desktop Macs? If you power them on or wake from sleep will it login if you have the watch on?

I expect so, I have a 27" 5K iMac and it's an option (but one that I have never used), despite having an Apple Watch

Unlock with Apple Watch only woks to unlock once you've logged in, but it does work on desktops (I use it on a 2018 Mac mini).

It should work on most, if not all, Macs made in 2013 or later.

works just fine on my iMac, from sleep that is. power-on will require typing password, on MacBook and iMac ...
