I have a set of Bluetooth speakers that I use randomly. The majority of the time, I just use the builtin speakers on my MBA with Mountain Lion. But there are times when I want to use my Bluetooth headphones. Unfortunately, everytime, I have to go to Bluetooth, the device, and then set it as an audio device. Is there anyway to do this so when I turn on the BT headphones, it connects automatically and makes it the sound device?

Just make your Bluetooth Headset your Primary/Default Audio output. your mac will fall back to your internal speaker when it does not find your bluetooth audio output.

I don't know about making your headphones the default, but easy enough to swap to the headphones by Option/Alt-clicking on the audio volume icon in your menubar. Choose your bluetooth headphones there. You would need to have the headphones turned on, of course, otherwise they won't be available in the menu.
