Is there a way to have my Macbook Pro automatically turn on when plugged in to AC? It's an older 17" Core 2 Duo model running OS X 10.6 and Debian Linux.

No, plugging in won't automatically turn on any Mac. You have to use the power button.

What about via ethernet? My PC can do both of these things, so I assume there must be a way?

I've never used it myself, but OSX does support Wake On LAN, so that should work.

I thought wake on lan was to wake from sleep, not from power off.

If I remember correctly OS X can be set to wake up to predetermined schedule if that is any use
