With both AirPods in my ears, removal of one pauses the music, with replacement of the AirPod restarting the music. Great.

If using one AirPod however, removal of the AirPod pauses the music, but replacement of the AirPod doesn't restart the music.

Does anyone else experience this/understand this?

I don't think that's true. 2 AirPods, removing one pause the music. Removing two stops the music.
1 AirPods, removing it stops the music.

This is what I guess.
 
Same here.

Removing a single Airpod (when using only 1) ends both the media + pairing to the device. But the Bluetooth icon's still lit & doesn't grey out as it does when you place the Airpods in the case, so the Airpods bluetooth connection is still detected, yet when reinserting the single Airpod, playback won't resume.

Strange, as you'd think it should?
 
Mine does not restart the music when using a single side. I use a single at a time throughout the day at work, I simply hit play on the lock screen of my phone, but it would be nice if it functioned like when wearing 2 with a single side removed.
