I installed the Lion GM and versions doesn't seem to be working. I opened up Textedit and Pages and I don't see any option for going to a version. I have restore windows when quitting apps checked in system preferences.

Yes, Textedit does. Just open a document, Save it as something, then you will see save be replaced by Save a Version. To enter Versions, go to the File Menu and "Revert to Saved". You can lock a document to prevent future Versions by hovering over the documents name in the titlebar of the app, where you'll see a little downward facing arrow.

Versions also works in Preview for annotating PDFs and editing picture files. It is quite neat to play with.
