It seems to be heavily user driven/discerning. Unless you select a work out that implies you're taking it into the water, the user must put it in wet mode by selecting the water drop. I guess if you're in the middle of a run and it starts dumping on you it's not really going to know unless you tell it. The reason i say this because the only time it prompts you to eject water is when you are either leaving a workout that is implied you'd be in the water or after you deselect the water mode.

The thing I wonder is.... is the black stainless steel polishable to remove scratches? or is the black part just a light coating on the stainless steel that would be polished off?

That is the only thing holding me back from a black SS because I love being able to polish my SS to remove scratches and make it look nearly brand new. I'd hate to scratch a black SS and know that it's permanent.
Yes it can be polished and to the OP, pull the trigger on the link bracelet it is so worth it and I finally pulled the trigger this year upgrading from a sport

WTF?! The question was "can it be polished to remove scratches". The answer is a most decidedly no. Certainly none that the underlying metal is showing through. (and thinning the DLC coating would be a truly horrible idea...it's really not very thick).

15 months....nary a scratch. If you have scratches, you've scratched it with something approaching diamond hardness.

You are super right! I was thinking of the link band. Though there is google results of people that did get micro scratches polished out of the case.

I have already banged it on things that would have at least scuffed the old sport no sign of anything on the SS
 
The eject feature is there just to keep any residual water from impeding your mic and/or speakers. I doubt it's technically necessary ever. I'd give ever used water proof camcorders you may have noticed that the mic sounds muffled and distorted after removing from water. This feature aims to correct that since Siri is such an integral part of the device.
