I set my alert volume about 3/4 of the way through the Watch app, but when I take it off the charger in the morning, I notice that it reverts to full volume. Has anyone else noticed this?

Must be a glitch. I would just try powering off the watch, then powering it back on, and see if that resolves the issue.
 
So it turns out that the Alert Volume in the Watch app on iPhone (under Sound & Haptics) increases to the max as soon as I remove AirPods from my ears. Can anyone replicate this?

Again, try a reset with the Apple Watch, and you can initiate a re-pair with your iPhone as well. Or re-pair your AirPods to your iPhone, or vice versa with the watch with the iPhone.
 
Tried that but the issue persists. I think it may be a software bug. Also, when I adjust the volume of music playing from my AW to my AirPods using the digital crown, I noticed that it also adjusts the Alert Volume within Sound & Haptics on the iPhone Watch app. I thought the Alert Volume slider was just for notifications, phone calls, etc. and was independent of volume for music and other content.
