So, I do not want to pick apart your post. But a couple of things:
If you have / had your phone everywhere, why do you need LTE on a watch; you have your phone? If you are unconscious, having neither a phone nor LTE watch will do you any good.

Someone a post above you mentioned ‘to have it all the times you forget your phone’. Am I just addicted to my phone so much that I rarely leave it behind?

I just am struggling to see the benefit. I do have a coworker that has one and says she loves being able to walk away from her desk and leave her phone and have the cellphone / messaging capabilities - I totally buy that. But beyond that, how often are people without their phone?

My biggest usage will be not having to whip my phone out for notifications and messages. I can easily flick my wrist, read, swipe to clear.

Full disclosure, I do not have an Apple Watch and plan to get a series 4. I do not plan to get an LTE, unless stainless steel only comes in LTE. And I am undecided if I will pilot LTE or not. Likely only planning to if they offer a trial period again.
Well I don’t think it’s a matter of not having your phone with you now but wanting to not have your phone. That’s why I would like one. To be able to leave my phone at home and still be able to get calls and texts.

There are times that I'd rather not carry the iPhone with me. Think of all the actives that the iPhone X will get in the way. Bicycle riding, going for a walk or run, mowing the grass... I am sure that you can think of a dozen times that you do not want to have your iPhone with you but still want your children to be able to reach you, or your office to be able to call you. That is when having LTE on your Apple Watch matters.

Yesterday, I needed to mow the yard. Having things in my pocket on the Z-Turn really isn't convenient. I left the iPhone in the house and just put in my AirPods. I listened to a podcast while mowing for three hours.

mine is $16.79 per month with taxes att wv. I just canceled. I barely used the function and I added a hotspot which does more for me and is only a few dollars more.
 
Hmm, with some of the pricing I am seeing here, I might have to reconsider even having it.
I only just got my AW3 (two days), and was going to add my iPad to ATT, too.

But...
 
Are there any times you would want to go somewhere and not take your iPhone?
Walking, running, gym, shopping :)

I find it quite liberating as am not constantly checking emails, social media etc. The wife & I have a rule now on date night - no phones, so I have the watch and only use it as a phone if needed, rather than looking at the phone between courses at other stuff. Same for her, it is all to easy to miss the moment and look at your phone constantly. The only thing we miss when we do that is a camera to capture the moment :)
 
As I posted in another thread. I often leave my office (not the building, my actual office) and go to meetings in conference rooms and such. When I do, I often leave my iPhone behind. I am already carrying a laptop, just don't need another thing to carry ;)
