Yea this is a strange question.

But is is it possible to use only the always on dimmed screen without having the watch turn on the backlight when you move your wrist ?

In the AW4 there is a setting in Settings-general-wake screen to disable wake on wrist raise and then you have to tap the screen to wake the watch. If you select this on AW5 does the “always on” screen remain on and the tap just makes it brighter ?

I am one of the few that is always trying to lower the AW4 brightness as much as possible and don’t like the the sudden backlight turning on and off in meetings. It would be very cool to have the always on display and just have the backlight by tapping.

This is exactly how it works. I'm finding this to be a great way to configure the new watch...for me, I don't really need it to wake up when I merely raise my wrist to check the time. A tap on the screen (or twisting the crown "up") turns it on whenever I need to do something. If you are working out with a third-party fitness app, you'll likely want the wake on raise feature to work, but it's a fairly simple matter to switch it back on in Settings.

Aah, you make a good point. Didn’t quite follow what OP meant initially but I see what you mean. Tried it, it’s useful to know that.
 
I’ve done this also, and it’s made a massive improvement to battery life. I was experiencing worse battery life like many others, but it’s now much better without raise to wake....

I too found the sudden brightening irritating so this is exactly what I've done and it looks more like a "real" watch. Quite happy tapping the screen if I want to interact with the watch.
 
This is how I want to set mine when I get it, but I do want it to show notifications when they come in.
