Backing up Apps

I need to do a fresh install of OS X, I am wondering if I can just copy the apps that i want to keep to an external disk than copy them over after the fresh install.

Also how would I go about backing up my email that I have collected with the OS mail app?

Thanks, for the help, that app seems awesome. My problem right now is that the external drive I am backing up to is FAT32 formatted with years of backed up windows files which I cannot afford to lose.

Can I do what I proposed before or are there any other solutions?
