I'm not having success backing up the watch. I was under the impression that you unpair the watch and then backup your phone. When you go to re-pair the new watch a restore option should be offered. I've tried this 3 times and this hasn't happened. Unfortunately when I call Apple for help I get a generalist who has to read manuals over the phone because that person doesn't have a clue.

Any advice would be highly appreciated.

I sold my Series 2 today, I unpaired at 11:30Am and when I got home from work to set up my Series 3 I restored from the backup that was created at 11:30 today. The watch backup happens when you unpair. Not sure when else it backs up though.

When you pair the new watch to you get a window that offer to setup as new or restore? I've tried it 3 times and was never offered that option. Did you backup the phone immediately after unpairing the first watch?

When you unpair your Apple Watch from your iPhone, your iPhone automatically creates a backup of your Apple Watch. Unpairing will erase all data from your Apple Watch. If your Apple Watch is unpaired while out of range of your iPhone, the backup might not have the latest data. When you're ready, you can pair your Apple Watch again and set it up from a backup.

You can browse and delete them under the General > Usage > Manage Storage > Apple Watch section of the iOS Settings app. Just tap the Edit button in the top right corner, select one or more backups

When you back up your iPhone to iCloud or iTunes, your iPhone backup will also include your Apple Watch data. ... App-specific data (for built-in apps) and settings (for built-in and third-party apps).

Your backup won't include:
  • Bluetooth pairings
  • Credit or debit cards used for Apple Pay on your Apple Watch
  • Passcode for your Apple Watch

Thanks Dave. I have been doing the unpairing and restore with my phone right beside the apple watch so that isn't an issue. In the attached screen shot I've circled the Documents and Data section. Are these the backups?

I just got it to work. I think the problem is I was starting the process through Reset and not Unpair. That seems to have made the difference.
