iPod touch Backing Up

So every time you plug in your iPod, iTunes will backup your iPod. However, where does it backup to? Is it really a backup file that will restore everything that you had when you backed up? If so, how would you restore it (I'm pretty sure the shift-click restore was removed in 8.0)? If not, what is the backup really for?
