I se apple's mail app for my email.
Does anyone know a good and simple way for me to back up all my email once i a while?

Duplicate the Mail folder. It's under "Your HD" > Library. But, really, you should be backing up your whole drive.

If you want to archive the emails into a searchable database, then MailSteward works very well
