Backup iPhone/SSH before upgrading to 5.0?

I have Jailbroken iPhone 4 with 4.3.1 and have to upgrade to iOS5 at the Apple store, and Im wondering how I can store and save all of my JB data, settings and apps?

Your post doesn't make any sense. You don't have to upgrade to anything, unless you have to take it in for service. 😕
