Whenever I plug in my iPod Touch and open itunes, It starts backing up my ipod...where is that backup stored?
 
the backup itself isnt a complete disk image backup, it seems to be just a pointer to whatever files are on your iPod that have been synced. Anyway, the location seems to be:
login name>library>application support>mobilesync>backup
under Mac OS X
and also it is:
C:\Documents and Settings\username\Application Data\Apple Computer\MobileSync\Backup
under Windows XP.

I believe they are compressed files containing data and settings from all your apps, as well as system-wide settings. The apps themselves aren't backed up, just their data.
