I'm new to jailbreaking and I just have a simple question. I have a lot of SMS messages, calendar events, etc... on my 2.1 un-jailbroken phone and I wanted to know if it's possible to back this up some way, jailbreak the phone, then restore this data. Is this possible and if so how would I go about doing it? Thanks.

iTunes should back it up, and then before you do anything to the phone drag the iTunes backup file from

(Your username for your mac)/Library/Application Support/MobileSync/Backup

in there, is your backup folder, copy that folder to the desktop or something, when you are finished, drop that folder back where it was after updating to iTunes 8 at the very end.

(For safekeeping, I recommend, you backup the backup :D)
