Connected my wife's iPhone last night and it showed 'syncing' and then went to 'Backing up...'. Well, 7 hours later the status hadn't changed and nothing was updated on the iPhone. I ejected the iPhone, and tried again, same results. Any steps I should follow? Does it have to do a backup every time the iPhone is attached? Seems like a step that could be managed by the user. HELP!

You can cancel the backup by clicking the "X" next to where it says "Backing up 'iPhone'..." It does try to do a backup every time you sync and there is no way to turn that off in iTunes right now.
