It's seems a little ridiculous that the base model only has 500GB, I mean the difference in price for an extra 500GB would be negotiable for Apple. Anyway, aside from this rant, what options are available for additional storage? I would be looking at something wireless with maximum transfer rates. Could I buy something to take advantage of the thunderbolt port?

The only TBolt options at the moment are very expensive. Either USB or fw800 drive are the only viable options. You could also use a NAS on the Ethernet port but that won't be as cheap as the other options.
 
External Options

Buy yourself a see-powered caddy with support for USB 3 and esata.

Buy the HDD of your choice. I use this and it works fine the caddy cost me around £25 and I have a lot of HDD's anyway, but a decent 1TB model won't cost you much. Okay, it won't look pretty, but I've hidden mine behind my iMac 🙂
 
Excuse my lack of knowledge but what is a "see-powered caddy"? Could you link me one so I have an idea? Are the transfer speeds OK? Thanks
