I am currently trying to run the createmediainstall (https://support.apple.com/en-gb/HT201372) command on terminal in recovery mode to install a mounted copy of Yosemite from a USB stick, it is currently saying it doesn't recognise the command I have also noticed it doesn't recognise sudo, basic commands like date etc seem to work however, any idea why?

Currently (trying and failing) to run El Capitan on 2011 Macbook Pro

Did you use the complete path as the article specified:

/Applications/Install\ OS\ X\ El\ Capitan.app/Contents/Resources/createinstallmedia

Did you make sure that that path does indeed exist?
