I have a self-built PC (running Win7) I use for gaming and storage of my files and I also own a MBP (latest version of Lion) and I am having some difficulty getting the two somehow connected completely over my router (Airport Extreme).

My PC uses a RAID 0 setup of SSDs as the main bootable drive and three other 3TB drives for storage of movies, music, photos, etc... My end goal is to be able to access ALL of my files from my PC to the Mac, but I am a little unsure on how to do it.

Currently, the only method that I have been somewhat successful with is going on my MBP, "right clicking" Finder, selecting connect to server, typing in my PC's IP address, type in credentials (username + pass) and I can access my C:\ drive, but nothing else. I cannot access my other drives (e.g. D:\, E:\, F:\, etc...)

If anyone else knows how to do this or can point me in the right direction, I would greatly appreciate it. Thanks!

Basically put both computers in the same workgroup.

Then create shares on the win7 pc.

You should be able to google for a guide on this.
