When I got my M2 (day 1) the indicator on the power plug was always orange because the system was keeping the charge at 80% for better battery life. The last several days it has been green and the battery is at 100 when plugged in. Did I change some setting by mistake or is this a Ventura thing
 
Optimized charging pays attention to when, and how long you use your Mac on battery, and it tries to proactively charge to 100% when it anticipates you'll be on battery soon. You didn't miss a setting. This is what it's supposed to do. It's not new in Ventura.

Leave your Mac plugged in most of the time for the next couple of days and it'll go back to stopping at 80%, instead of doing a full charge.

This. If you want to preserve even more battery life, I recommend installing AlDente.
 
You should check to make sure Optimized Battery Charging is still set. Under Ventura Apple moved it to an odd location under Battery Health. While I haven't tested this recently under Ventura, when I was using Monterey the optimized battery charging setting would get reset when I instructed the computer to charge to 100% immediately.
