Battery life after turning on cellular, on Apple Watch ultra. Lasting only a day. Anyone else have this problem?

I am assuming you're using the Ultra stand-alone w/out your iPhone within Bluetooth range. Cellular modem will consume battery, especially if cellular signal is not strong and modem needs to scan/search for signal. Depending on the strength of cell signal and tower locations, your battery life could be reasonable.
