I'd recommend "Learning to see creatively" and "Digital Art Photography for Dummies". Don't knock that second one, it's actually pretty amazing

Another vote for Understanding Exposure. Explains the concepts really well, with nice pictures to reflect what is being talked about. Excellent book for starting out!
