Best amount of RAM in a Nehalem Mac Pro?

I have 16GB of RAM in my mac pro and it seems to be enough (runs so much faster now! Its a difference of night and day!). Anyway it seems that I might need even more RAM. Most of the time I have 5GB RAM free and sometimes even as low as 2mb free!

I'll be adding 16GB (4x4GB) more in the near future to make a total of 32GB. Especially with snow leopard installed on this beast this friday! :)
