Your MBP can't take advantage of the newer faster drives coming out so buying current models would be fine.

I believe you are mistaken. The 2011 MBPs DO have SATAIII and can take advantage of the new SATAIII controller drives. Most of the current drives are only SATAII speeds and will not fully utilize the 2011 MBP SATAIII connection. Now whether there would be much of a real world usage difference is another matter.
 
After waiting 8 months for intel G3 (keeps getting pushed back) I bought an x25m 80gb last week. When i buy a new mbp in 2012 ill buy the latest and greatest ssd.

I say wait for the vertex 3. I am. And my MBP is the mid 2010 and isn't Sata III. I plan on getting another computer as soon as a redesign happens. SSDs are simply too expensive to buy a current-gen with the excuse that you'll save 50 bucks, when sooner than later you'll have a computer that takes full advantage of the speed. Just wait til the vertex 3, use it, and then when you buy a computer that can take full advantage it put it in there and notice even better performance.
 
The OP asked for the "best bang for the buck". If you want a larger SSD, then Apple's would be my choice. You can't get a 500GB SSD anywhere else for $1100. It might not have the top of line performance but it will have very good performance, have full Apple support, and is the cheapest 500GB SSD out there.
