So I just picked up a "satisfactory" open box silver M1 Air 8/256 from Best Buy the other day for $584. I know this is a risk, but for the price I couldn't pass it up. Any recommendations of things to check during this 14 day return window?

Visually; some smudges and gunk that cleaned easily, no scratches, came with the charger but no stickers.

Diagnostics test from boot was fine, battery shows 4 cycles, and looks like it was originally purchased/activated about a week before I picked it up.

Would an Apple Genius be able to crack it open and see if there's evidence of water damage? Something insidious such as water damage is my biggest concern.

Do you have the option of purchasing AppleCare? That way if something goes out after 14 days then you don't need to worry.

A fair point, it would certainly give me the peace of mind, but I’m already pushing my budget with the wife, not sure if I can convince her of this as well 😂

I’ve also read in a few places that Apple won’t do AppleCare on a open box from Best Buy that’s less than excellent, but I haven’t confirmed that.
 
How long is the warranty? Is it one year without apple care? If that is so, than you should be probably okay. Any water damage can cause corrosion to starts making problems in 2 or 3 months. I have seen many water damaged laptops, but I have never experienced so far that water damage can cause problem after one year.
In any case, I would go with apple care, it simply isn't worth the risk.
