I'm hoping to purchase an iPad so that I can take into lectures and type notes. But apparently the only iPad with the Smart Keyboard is the iPad Pro.

Would this be my best bet? I really only need it for simple word processing, and obviously a keyboard would be ideal.
 
All iPads work with Bluetooth keyboards. Just find the iPad you like & purchase a Bluetooth keyboard to go with it.

I've just switched to the 2018 entry-level iPad, away from the Pro I owned previously. To my mind it's indistinguishable for everyday tasks. The only deal-breaker would be the Smart Keyboard if you really love it that much; otherwise Brydge, Zagg, or and of other physical keyboards are pretty refined and work well.
