Need some tips and advice.

How would you polish the rims of the stainless steel? Not the flat sides, the rim outline you see when you view the display.

What’s a good way to avoid getting the polish on the glass or the crevice between the metal & glass?
 
Jesus leave it alone. You're going to cause more problems then you're trying to correct. Leave it as it is. With the glass that close to the bezel, you'll just end up polishing some of the screen coating off or something else.

holy moly, no need to be offended lol
 
I would get it inside a case right away and not think about it. I know you want to keep it perfect. No one will know there is a scratch or problem but you. It's not worth your OCD energy. Not trying to be mean. I have OCD. LOL
 
Metal polish is made from a paste of highly abrasive material that is "harder" than steel. Polishing actually takes material off the metal. I'd be very wary of using metal polish on a phone as any little bit gets on the screen, and you will scratch the bejesus out of it.
