I'm thinking of switching to CS6 but was wondering what was the most compatible OS to use with it?
 
10.8 is quite stable with CS6. Unfortunately other applications do require a newer OS and there are no more security fixes for Mountain Lion.
 
which apps are you talking about?
Apps like a secure recent browser (even firefox ESR will end support soon) or the latest version of Noiseless Pro ... thinking ... MySQLWorkbench ... I know there have been more apps that I couldn't upgrade. Even though you still can do the most things in 10.8, but more apps will have demand for a recent OS and I'm not sure if there will be a community around for 10.8 at some day like for PPC.
 
you need to install a legacy Java
Do you know if the legacy version of Java just needs to be installed or actively in use. In other words: Will CS6 continue working if you switch to a recent Java version while the legacy version is installed?

Uncertain I'm afraid. All I can say is CS6 works and nothing else complains about Java being out of date.
