Best software for video capture

I know quicktime does this but dims down the screen.. is there a way to disable this?

For capturing video? I'm not sure I understand the question. Capturing video means having recorded video on your phone, and uploading it to editing software via capturing. Is that what you are talking about?

QuickTime is a Mac application...

If you want to capture your screen on an iOS device, you can download Display Recorder from Cydia on a *jailbroken* phone.

With OS X Yosemite and iOS 8, you can do a screen capture of your device in QuickTime.
