I just got a 500 GB USB 2.0 Hard Drive.

What is the best way to backup my data with Snow Leopard? That includes my Parallels stuff, and my Boot camp partition?
 
Time machine of course.

Just go to system preferences and choose the HD to be used as a time machine hd and it will start to backup automatically.
 
The easiest thing to do is use Time Machine with your USB drive. I did that until I bought a Time Capsule. Now I point Time Machine to the Time Capsule.

I do the following:
1) Time Machine to Time Capsule
2) Carbon Copy Cloner to a USE drive to give me a bootable option
3) Mozy for data only, for offsite storage

I have had Time Machine let me down when backing up via 802.11g. It has worked fine over ethernet, firewire or usb. I now use Time machine and crashplan. I have also used carbon copy cloner when upgrading to a new HDD.
