I've given up trying to use Safari for Youtube - even if you do manage to block the ads then you still have other issues like sponsored ad reads, sub/like begging, and annoying intros.

Personally I use Firefox with a bunch of addons; SponsorBlock, Enhancer for Youtube, uBlock Origin, and CleanURL's (amongst others)

With Brave there is no need for blockers and plugins. It is designed to block.

That's true, but it only blocks ads and some tracking. If you want to block ad reads in videos (as in where the person in the video reads out an ad), video intros, clickbait thumbnails, and "don't forget to like and subscribe" begging then you still need other addons to achieve that.

Cool, so I tried out Brave and it does block the ads for me which is awesome so far. The only issue though is it causes my mac to overheat and the fans to run on high... but that is probably due to my quite old MBP... although that overheating doesn't happen in safari. But at this point I'll take it... :)

I use Adblock Pro and Ad guard, but I keep Ad Guard on or everything but Youtube, Ad Block Pro is for YouTube. The problem I have with Ad Guard is it seems to break Youtube.
 
I have AdGuard too and this happens to me except I just refresh the page and it solves the issue.
if you get the free/trial version of macpaw's cleanmymacX, it will tell you adguard was developed by russians and/or belusarians. i deleted it immediately. use it at your own risk.

This of course is because MacPaw is a Ukrainian company.
 
OP here... I've had zero luck with anything...
It isn't the answer to your question but I use Brave browser exclusively for YouTube because it does block all ads. I even renamed the app "YouTube" so I can just open it quickly by typing YouTube into Spotlight.

It isn't what you're wanting but it works for me

I've been using 1Blocker and their scripts feature for blocking Youtube ads in Safari, and so far it's still working.
